It’s day 16 of the Vegan Month of Food – affectionately known as Vegan MoFo. If you’ve been following along for a while you know my thing is doing a big cook on the weekend so I can just assemble dinner all week long. This is one of the products of a big cook.
Ingredients
- 1 eggplant, sliced about 1/2 inch thick, sprinkled with steak spice and roasted at 400 F on a baking sheet lined with parchment paper 10 minutes each side
- homemade hummus, try roasted red pepper hummus or Portuguese pumpkin hummus or zucchini hummus
- marinara sauce, homemade or store bought
What you’re gonna do:
Assemble eggplant pizzas by topping each eggplant slice with hummus, marinara sauce and some fresh veggies if you have em. Feel free to add a little nutritional yeast or dairy-free cheese. You can heat them through again by baking at 350 for 10 minutes or heat them up in a skillet.
I served these little pizzas with some potatoes I had roasted ahead of time and some skillet black beans and sauteed onions.
